1 large egg
1 cup buttermilk

2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced small

Instructions
In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar.
In a separate bowl, lightly beat the egg, then whisk in the buttermilk and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
Fold in the diced apples until they are evenly distributed in the batter.
Pour about 2 inches of vegetable oil into a deep, heavy-bottomed pot or Dutch oven. Heat the oil to 350 degrees Fahrenheit (175 degrees Celsius). Use a thermometer to check the temperature.
Carefully drop the batter by heaping tablespoons into the hot oil, working in small batches to avoid crowding the pot.
Fry the fritters for 2 to 3 minutes per side, turning them once, until they are deep golden brown and cooked through.
