2 cups cooked turkey, shredded or chopped
1 cup barbecue sauce (tangy style)
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
4 large sandwich buns
2 tablespoons butter, softened
1 cup coleslaw mix
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
Instructions
Combine the shredded turkey, barbecue sauce, apple cider vinegar, smoked paprika, garlic powder, and cayenne pepper in a medium saucepan.
Heat the mixture over medium-low heat, stirring occasionally, until the turkey is heated through and well coated, about 8 to 10 minutes. Keep the heat low to prevent the sauce from burning.
While the turkey heats, prepare the quick slaw: In a small bowl, mix the coleslaw mix, mayonnaise, and Dijon mustard until combined.
Lightly butter the cut sides of the sandwich buns. Toast the buns in a dry skillet over medium heat until golden brown, about 1 to 2 minutes per side.
Spoon the hot barbecue turkey mixture onto the bottom half of each toasted bun.
Top the turkey with a portion of the tangy slaw. Place the top bun on the sandwich. Serve immediately.
Notes
For extra flavor, add a splash of liquid smoke to the turkey mixture.
If your leftover turkey is dry, add 1/4 cup of chicken broth to the sauce mixture to help keep it moist.
This recipe works well for making day-after sliders using smaller rolls.
