Make a satisfying, casual sandwich using leftover turkey smothered in sweet and spicy barbecue sauce, topped with crunchy coleslaw.

  • 2 cups cooked turkey, shredded or chopped
  • 1 cup barbecue sauce (tangy style)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 4 large sandwich buns
  • 2 tablespoons butter, softened
  • 1 cup coleslaw mix
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Combine the shredded turkey, barbecue sauce, apple cider vinegar, smoked paprika, garlic powder, and cayenne pepper in a medium saucepan.
  2. Heat the mixture over medium-low heat, stirring occasionally, until the turkey is heated through and well coated, about 8 to 10 minutes. Keep the heat low to prevent the sauce from burning.
  3. While the turkey heats, prepare the quick slaw: In a small bowl, mix the coleslaw mix, mayonnaise, and Dijon mustard until combined.
  4. Lightly butter the cut sides of the sandwich buns. Toast the buns in a dry skillet over medium heat until golden brown, about 1 to 2 minutes per side.
  5. Spoon the hot barbecue turkey mixture onto the bottom half of each toasted bun.
  6. Top the turkey with a portion of the tangy slaw. Place the top bun on the sandwich. Serve immediately.

Notes

  • For extra flavor, add a splash of liquid smoke to the turkey mixture.
  • If your leftover turkey is dry, add 1/4 cup of chicken broth to the sauce mixture to help keep it moist.
  • This recipe works well for making day-after sliders using smaller rolls.
