Quick Beef and Broccoli Stir-Fry

Make Chinese-American takeout-style beef and broccoli at home. This recipe features tender beef and crisp broccoli in a savory soy-garlic sauce, perfect for a weeknight dinner.

  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil, plus more for stir-frying
  • 1 head broccoli, cut into florets
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/4 cup oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup water or beef broth
  • 1 teaspoon cornstarch
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss the sliced beef with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Let it marinate for at least 10 minutes.
  2. Blanch the broccoli florets in boiling water for 1-2 minutes until bright green and crisp-tender. Drain and set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and cook for 1-2 minutes per side until browned. Remove beef from the wok and set aside.
  4. Add a little more oil to the wok if needed. Add the minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant.
  5. In a small bowl, whisk together the oyster sauce, 2 tablespoons soy sauce, brown sugar, water or beef broth, and 1 teaspoon cornstarch.
  6. Pour the sauce into the wok and bring to a simmer, stirring constantly until it thickens.
  7. Return the cooked beef and the blanched broccoli to the wok. Toss everything together to coat with the sauce.
  8. Cook for another 1-2 minutes until heated through.
  9. Serve immediately over cooked rice.

Notes

  • For extra tender beef, you can add 1 teaspoon of baking soda to the marinade along with the soy sauce and cornstarch.
  • Adjust the amount of sugar and soy sauce to your preference.
  • If you don’t have oyster sauce, you can substitute with hoisin sauce, but the flavor will be slightly different.
