A creamy and comforting one-dish casserole featuring chicken, bacon, and ranch flavors, perfect for a weeknight family meal. This recipe is designed for easy preparation and can be made ahead.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces bacon, chopped
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup milk
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
  4. Add the chicken pieces to the skillet with the bacon grease. Cook until browned and cooked through. Drain any excess grease.
  5. In a large bowl, combine the cooked pasta, cooked chicken, cream of chicken soup, milk, ranch seasoning mix, and sour cream. Stir until well combined.
  6. Fold in half of the cooked bacon and half of the shredded cheddar cheese.
  7. Pour the mixture into a greased 9×13 inch baking dish.
  8. Top with the remaining cheddar cheese and the remaining bacon.
  9. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For a make-ahead option, prepare the casserole up to step 6, cover, and refrigerate. Bake for an additional 10-15 minutes, or until heated through.
  • You can substitute rotisserie chicken for cooked chicken breasts to save time.
  • Add your favorite vegetables like broccoli florets or peas for extra nutrition.
  • This casserole pairs well with a simple green salad.
