1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1 pound pasta (penne or rotini work well)
4 cups chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, drained and chopped
2 cloves garlic, minced
1/4 cup chopped fresh basil, for garnish
Instructions
Season the chicken pieces with salt, pepper, Italian seasoning, and garlic powder.
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let it burn.
Pour in the chicken broth and bring the liquid to a boil. Add the dry pasta to the boiling broth.
Reduce the heat to medium-low, cover the skillet, and cook according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid is absorbed, about 10 to 12 minutes.
Stir in the heavy cream, grated Parmesan cheese, and chopped sun-dried tomatoes. Stir until the sauce is smooth and creamy.
Return the cooked chicken to the skillet and stir to coat everything in the sauce. Heat through for 1 to 2 minutes.
Serve immediately, garnished with fresh basil.
Notes
If the sauce seems too thick, add a splash more broth or cream until you reach your preferred consistency.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
For a little heat, add 1/4 teaspoon of red pepper flakes when you add the garlic.
