Ingredients
Scale
1 (15 ounce) can chili (no beans recommended)
1 (8 ounce) package cream cheese, softened
1 cup shredded sharp cheddar cheese
Instructions
Combine the chili and softened cream cheese in a medium saucepan or a small slow cooker insert.
Heat over medium-low heat on the stovetop, stirring occasionally until the cream cheese is fully melted and the mixture is smooth. If using a slow cooker, cook on low for 1 hour, stirring halfway through.
Stir in the shredded cheddar cheese until completely melted and the dip is uniform and creamy.
Transfer the dip to a serving bowl. Serve immediately with tortilla chips, crackers, or vegetable sticks.
Notes
For a thicker dip, use canned chili that contains beans. Drain off excess liquid before mixing.
If you want a richer flavor, substitute half of the cheddar cheese with Pepper Jack for a little heat.
This dip is excellent served directly from a small slow cooker set to the ‘Keep Warm’ setting during your party.
