Make these easy Christmas cookie bars for a simple, crowd-pleasing holiday dessert. They are chewy, buttery, and loaded with festive M&Ms and sprinkles for maximum visual appeal.

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup holiday M&Ms (red and green)
  • 1/2 cup Christmas sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This is your base flavor.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. Fold in the chocolate chips, holiday M&Ms, and Christmas sprinkles. Keep some sprinkles aside for the top.
  7. Press the dough evenly into the prepared 9×13 inch pan. Sprinkle the remaining M&Ms and sprinkles over the top.
  8. Bake for 22 to 25 minutes, or until the edges are lightly golden brown and the center is mostly set. You want them slightly underdone for chewiness.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
  10. Cut into squares and serve. These are great make ahead holiday desserts.

Notes

  • For extra buttery flavor, substitute 1/4 cup of the butter with brown butter. Let melted butter cool slightly before creaming with sugar.
  • If you want a thicker bar, use an 8×8 inch pan, but increase the baking time by about 10 to 15 minutes.
  • These bars freeze well. Cool completely, slice, and store in an airtight container between layers of wax paper before freezing.
