1 cup shredded cheddar cheese (or Mexican blend)
1/4 cup salsa or Rotel (diced tomatoes and green chilies)
1 teaspoon taco seasoning
1/4 teaspoon cumin (optional)
Instructions
Place the cottage cheese, shredded cheese, salsa or Rotel, taco seasoning, and cumin (if using) into a high-speed blender.
Blend on high speed until the mixture is completely smooth and creamy, stopping to scrape down the sides as needed. This should take about 1 to 2 minutes.
Pour the blended mixture into a microwave-safe bowl.
Microwave on high for 30 to 60 seconds, stirring halfway through, until the queso is heated through and slightly looser.
Serve immediately with tortilla chips, vegetable sticks, or as a topping for tacos or nachos.
Notes
For the creamiest texture, use a powerful blender. If you do not have one, you may need to heat the mixture on the stovetop over low heat after blending to ensure the cheese fully melts.
Adjust the amount of salsa or Rotel to control the spice level and liquid content.
This dip is excellent served warm but will thicken as it cools.
