You want shatteringly crispy chicken wings without the mess of deep frying. This recipe uses a simple oven technique to achieve restaurant-quality crunch and juicy meat every time. These are the best crispy baked chicken wings for game day or a quick dinner.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes separated)
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with foil and place a wire cooling rack on top of the foil. This setup allows air to circulate around the wings for maximum crispiness.
  2. Pat the chicken wings completely dry using paper towels. This step is crucial for achieving crispy skin.
  3. In a large bowl, combine the baking powder, kosher salt, black pepper, garlic powder, and onion powder. This is your dry rub.
  4. Add the dried chicken wings to the bowl. Toss them thoroughly until every piece is evenly coated with the dry rub mixture. The baking powder helps dry out the skin surface.
  5. Arrange the coated wings in a single layer on the wire rack, ensuring they do not touch.
  6. Bake for 20 minutes.
  7. Flip the wings over. Reduce the oven temperature to 400°F (200°C).
  8. Bake for another 20 to 25 minutes, or until the skin is deeply golden brown and audibly crisp.
  9. Remove the wings from the oven. Toss immediately with your favorite sauce or serve as is with the dry rub.

Notes

  • For extra sticky glazed wings, toss the hot, cooked wings in your favorite sauce (like Honey Garlic or BBQ) immediately after removing them from the oven.
  • If you plan to use a wet sauce, serve the sauce on the side for dipping to keep the wings crisp longer.
  • This technique works well for air fryer chicken wings; cook at 380°F for 18 minutes, flipping halfway.
