Make this easy, family-friendly baked crispy cheddar chicken. It features tender chicken breasts coated in a crunchy, cheesy cracker crust for a satisfying weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup crushed buttery crackers (like Ritz)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a shallow dish, combine the crushed crackers, shredded cheddar cheese, Parmesan cheese, salt, pepper, and garlic powder. Mix well.
  3. In a second shallow dish, whisk together the eggs and milk.
  4. Place the flour in a third shallow dish.
  5. Dredge each chicken breast first in the flour, shaking off any excess.
  6. Dip the floured chicken into the egg mixture, allowing excess to drip off.
  7. Press the chicken firmly into the cracker and cheese mixture, coating both sides completely.
  8. Place the coated chicken breasts in the prepared baking dish.
  9. Drizzle the tops of the chicken evenly with the melted butter.
  10. Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the crust is golden brown and crispy.
  11. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispiness, you can lightly spray the tops of the coated chicken with cooking spray before drizzling with butter.
  • If you prefer a thicker sauce, serve this alongside a simple cream of chicken soup base mixed with a splash of milk.
  • This recipe works well with chicken thighs if you prefer dark meat. Adjust baking time as needed.
