This slow cooker beef dinner delivers rich French onion flavor and tender meatloaf with minimal effort. It is a simple set-it-and-forget-it family meal.

  • 2 pounds ground beef
  • 1 packet French onion soup mix
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup caramelized onions (or use 1 large onion, thinly sliced, cooked until soft)
  • 1 cup Swiss cheese, sliced or shredded
  • Fresh thyme, for garnish (optional)

Instructions

  1. In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, milk, beaten eggs, ketchup, and Worcestershire sauce. Mix the ingredients gently until they just come together. Do not overmix the meat.
  2. Shape the mixture into a loaf shape. Place the meatloaf directly into the basin of your slow cooker.
  3. Cover the crockpot and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. The internal temperature should reach 160°F (71°C).
  4. During the final 30 minutes of cooking, spread the caramelized onions evenly over the top of the meatloaf. Lay the Swiss cheese slices over the onions.
  5. Cover and continue cooking until the cheese is fully melted and bubbly.
  6. Carefully remove the meatloaf from the crockpot. Slice and garnish with fresh thyme before serving. Serve this juicy meatloaf hack with your favorite side dishes.
