A quick and cheesy Tex-Mex casserole with seasoned ground beef, Rotel tomatoes, and a creamy sauce, topped with crushed Doritos for a crunchy finish. Perfect for busy weeknights or game day.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9 ounces) Doritos, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain off any excess grease.
  3. Stir in the undrained Rotel tomatoes, condensed cream of chicken soup, and sour cream. Mix well.
  4. Add 1 cup of the shredded cheddar cheese to the mixture and stir until melted and combined.
  5. Pour the beef mixture into a 9×13 inch baking dish.
  6. Sprinkle the crushed Doritos evenly over the top of the mixture.
  7. Top with the remaining 1 cup of shredded cheddar cheese.
  8. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.

Notes

  • For a chicken version, substitute 2 cups of shredded cooked chicken for the ground beef.
  • You can assemble this casserole ahead of time and freeze it. Thaw overnight in the refrigerator before baking. Add a few extra minutes to the baking time if baking from frozen.
  • For a spicier casserole, use a can of Rotel with jalapeños or add a pinch of cayenne pepper to the meat mixture.
