8 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup finely chopped pecans, divided
1/4 cup finely chopped fresh parsley, divided
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
Crackers, for serving
Instructions
In a medium bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until well combined.
Stir in 1/4 cup of the chopped pecans, 2 tablespoons of the chopped parsley, garlic powder, and black pepper. Mix until all ingredients are evenly distributed.
Cover the bowl and refrigerate for at least 1 hour, or until firm enough to shape.
On a plate or shallow dish, combine the remaining 1/4 cup chopped pecans and 2 tablespoons chopped parsley.
Once the cheese mixture is firm, scoop it out and shape it into a ball using your hands.
Gently roll the cheese ball in the pecan and parsley mixture, pressing lightly to coat evenly.
Transfer the cheese ball to a serving platter. Cover and refrigerate until ready to serve.
Serve with your favorite crackers.
Notes
For a different flavor, you can add 2 tablespoons of finely chopped cooked ham or bacon to the cheese mixture.
Experiment with different nuts like walnuts or almonds for rolling.
You can also roll the cheese ball in paprika or a combination of herbs for a different look and taste.
