Viral Cheddar Bay Chicken Cobbler Casserole

This is the easy chicken cobbler casserole you need for a weeknight dinner. We use rotisserie chicken and store-bought biscuit mix to make this hearty, creamy comfort food fast.

  • 2 cups cooked, shredded rotisserie chicken
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (10 ounce) package Cheddar Bay Biscuit Mix (or Red Lobster biscuit mix)
  • Ingredients listed on biscuit mix package (usually water and melted butter)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish. This is your one-pan wonder setup.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, milk, frozen vegetables, thyme, pepper, and salt. Stir until everything is evenly coated and mixed.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. Prepare the biscuit topping according to the package directions, usually mixing the dry mix with water and melted butter. Do not overmix the batter.
  5. Drop spoonfuls of the biscuit batter over the top of the chicken filling. Space the dough evenly to cover most of the surface.
  6. Bake for 20 to 25 minutes, or until the filling is bubbly and the biscuit topping is golden brown and cooked through.
  7. Let the chicken cobbler rest for 5 minutes before you serve it hot.

Notes

  • Using rotisserie chicken is the main hack here; it cuts down your prep time significantly.
  • If you do not have Cheddar Bay mix, you can use a standard refrigerated biscuit dough, brushing the tops with melted butter mixed with a pinch of garlic powder and cheddar cheese before baking.
  • For extra flavor, stir 1/4 cup of shredded sharp cheddar cheese into the chicken filling before topping with biscuits.
