1 pound Italian sausage, casings removed (or ground chicken)
1 medium yellow onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup sun-dried tomatoes, chopped (optional)
1 (16 ounce) package cheese tortellini
5 ounces fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil, for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
Add onion, carrots, and celery to the pot. Cook until vegetables soften, about 5 to 7 minutes.
Stir in garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in chicken broth and add diced tomatoes (with juice) and sun-dried tomatoes, if using. Bring the mixture to a simmer.
Add the tortellini to the simmering broth. Cook according to package directions, usually 5 to 7 minutes, until tortellini float and are tender.
Stir in the fresh spinach until it wilts into the soup, about 2 minutes.
Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the soup is creamy and heated through. Do not boil after adding cream.
Taste and adjust seasoning if needed. Serve immediately, garnished with fresh basil.
Notes
For a faster version, use pre-cooked chicken or skip the sausage and use vegetable broth for a vegetarian option.
If you prefer a thicker broth, you can whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering soup before adding the cream.
This soup freezes well if you omit the cream; add the cream back in when reheating.
