Ingredients
Scale
12 large eggs
1 cup cottage cheese
1 cup milk (any kind)
1 teaspoon salt
1/2 teaspoon black pepper
1 cup diced cooked ham
1 cup shredded cheddar cheese
1 cup frozen chopped broccoli, thawed and drained
1 tablespoon butter, for greasing
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish with butter.
In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until the mixture is smooth and slightly frothy. This helps create a fluffy egg bake.
Gently fold in the diced ham, shredded cheddar cheese, and drained broccoli into the egg mixture. Do not overmix.
Pour the entire mixture evenly into the prepared baking dish.
Bake for 30 to 35 minutes, or until the center is set and a knife inserted near the middle comes out clean. The top should be lightly golden.
Let the egg bake rest for 5 minutes before slicing and serving. This is a great make ahead breakfast option; assemble the night before and bake in the morning.
Notes
For a low carb egg casserole, skip any bread or hash browns you might usually add.
If you want a higher protein breakfast bake, increase the amount of ham or add cooked sausage.
This recipe works well for meal prep breakfast casserole; cut into portions and refrigerate leftovers for quick morning meals.
