Make these simple, flourless peanut butter cookies in under 15 minutes. They are naturally gluten-free and perfect for a quick snack.

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine peanut butter, sugar, and egg. Mix until well combined. If using, stir in chocolate chips.
  3. Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 2 inches apart.
  4. Use a fork to press a crisscross pattern onto the top of each cookie. This helps them bake evenly.
  5. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will still look soft.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
