A simple fruit pizza recipe using refrigerated sugar cookie dough for a quick and delicious dessert.

Ingredients

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Assorted fresh fruit, sliced (such as strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the sugar cookie dough evenly into the bottom of a 12-inch pizza pan or a baking sheet.
  3. Bake for 12-15 minutes, or until golden brown around the edges. Let the crust cool completely.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  6. Arrange the sliced fresh fruit over the frosting to create your desired design.
  7. Chill for at least 30 minutes before slicing and serving.

Notes

  • For mini fruit pizzas, press cookie dough into mini muffin tins and bake for 8-10 minutes.
  • You can use a piping bag to create decorative patterns with the cream cheese frosting.
  • Consider using a glaze made from melted apricot jam for extra shine on the fruit.
