Instructions

  1. Combine the flour, sugar, baking powder, and salt in a medium bowl. Whisk these dry ingredients together until they are fully mixed.
  2. In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Whisk until the batter is smooth. Do not overmix; a few small lumps are acceptable.
  4. Pour about 2 inches of vegetable oil into a deep, heavy-bottomed pot or Dutch oven. Heat the oil to 375 degrees Fahrenheit. Use a thermometer to check the temperature accurately.
  5. Carefully transfer the batter into a funnel with a small piece of aluminum foil placed over the spout opening. Hold your finger over the spout to stop the flow.
  6. Hold the funnel over the hot oil. Remove your finger and quickly move the funnel in a circular or crisscross pattern to create the classic funnel shape. Fill the oil with one or two cakes, depending on the size of your pot.
  7. Fry the funnel cake for about 1 to 2 minutes per side, until it is golden brown and crisp.
  8. Use tongs or a slotted spoon to carefully remove the funnel cake from the oil. Place it on a wire rack lined with paper towels to drain excess oil.
  9. Dust generously with powdered sugar while the cake is still warm. Serve immediately for the best crispy texture.
