  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chicken broth or water
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the cubed chicken evenly with salt, pepper, and paprika.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer, ensuring not to overcrowd the pan. Cook for 4-5 minutes until golden brown on all sides.
  3. Reduce the heat to medium. Add the butter and minced garlic to the skillet. Cook for about 1 minute, stirring constantly until the butter melts and the garlic is fragrant. Do not let the garlic burn.
  4. Pour in the chicken broth or water. Scrape up any browned bits from the bottom of the pan. Let the sauce simmer and reduce slightly for 2-3 minutes, coating the chicken.
  5. Remove the skillet from the heat. Stir in half of the fresh parsley.
  6. Serve the chicken bites immediately, garnished with the remaining parsley.

Notes

  • For extra crispy edges, cook the chicken in two batches instead of overcrowding the pan.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
