1 cup unsalted butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 large egg
1 box (15.25 ounces) yellow cake mix
1 cup powdered sugar, for rolling
Instructions
Combine the softened butter and cream cheese in a large bowl. Beat them together with an electric mixer until the mixture is smooth and creamy.
Beat in the vanilla extract and the egg until just combined.
Add the entire box of dry yellow cake mix to the wet ingredients. Mix on low speed until a thick dough forms. Do not overmix.
Place the remaining 1 cup of powdered sugar into a shallow dish.
Scoop the dough into tablespoon-sized balls. Roll each ball completely in the powdered sugar.
Place the coated dough balls onto baking sheets lined with parchment paper, leaving about 2 inches between each cookie.
Bake at 350 degrees Fahrenheit for 10 to 12 minutes. The edges should look set, but the centers will still look soft and slightly underdone.
Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. They will firm up as they cool, keeping the center gooey.
Notes
For a holiday twist, add 1/2 teaspoon of almond extract with the vanilla, or mix red and green sprinkles into the powdered sugar coating before rolling.
If you want a lemon flavor, substitute the vanilla extract with 1 teaspoon of lemon extract and add 1 tablespoon of fresh lemon zest to the dough.
These cookies spread less if the dough is chilled for 30 minutes before rolling and baking.
