3 pounds apples (such as Fuji, Gala, Honeycrisp, or a mix)
1/2 cup water
1/4 cup granulated sugar (optional, adjust to taste)
1 teaspoon ground cinnamon
1 tablespoon lemon juice
Instructions
Wash, peel, core, and chop the apples into 1-inch pieces.
Combine the chopped apples and water in a large pot or Dutch oven.
Bring the mixture to a boil over medium-high heat.
Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the apples are very tender. Stir occasionally.
Remove the pot from the heat.
Mash the apples with a potato masher or blend with an immersion blender until you reach your desired consistency. For smoother applesauce, you can use a food processor or blender.
Stir in the sugar (if using), cinnamon, and lemon juice.
Taste and adjust seasonings as needed.

For a chunkier applesauce, mash the apples less.
