  1. Activate the yeast: In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5 to 10 minutes until foamy.
  2. Make the dough: Stir in the flour and salt into the yeast mixture. Mix until a shaggy dough forms. Turn the dough onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.
  4. Prep the dogs: While the dough rises, pat the beef franks dry with paper towels.

  6. Wrap the dogs: Take one dough rope and wrap it around one hot dog, starting at one end and overlapping slightly as you spiral up to the other end. Pinch the ends firmly to seal the dough around the frank.
  7. Prepare the bath: In a wide, shallow pan, bring 8 cups of water and the 1/2 cup of baking soda to a boil. This is your lye substitute; it creates the classic pretzel crust.
  8. Boil the dogs: Carefully lower 2 or 3 wrapped dogs at a time into the boiling baking soda water. Boil for 30 seconds on each side (1 minute total). Remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
