Make tender, glossy honey glazed carrots roasted to perfection. This easy side dish uses honey, brown sugar, and garlic for a sweet and savory flavor that pleases the whole family.

  • 1.5 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the cut carrots with melted butter, honey, brown sugar, minced garlic, salt, and pepper on a large baking sheet. Mix until the carrots are evenly coated.
  3. Spread the carrots in a single layer on the baking sheet. Do not overcrowd the pan; use two sheets if necessary for better caramelization.
  4. Roast for 25 to 30 minutes, stirring halfway through the cooking time. The carrots should be tender when pierced with a fork and slightly caramelized.
  5. Remove from the oven and sprinkle with fresh parsley before serving immediately.

Notes

  • For baby carrots, reduce the roasting time by about 5 to 7 minutes.
  • If you prefer a stovetop method, simmer the carrots in a covered skillet with 1/2 cup of water until tender, then uncover and add the glaze ingredients, cooking until the liquid reduces to a thick sauce.
