This John Wayne Casserole is a hearty, cheesy family favorite. We translate the classic comfort food into an easy, layered bake perfect for weeknight dinners or feeding a crowd.

  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 (10 oz) can Rotel (diced tomatoes and green chilies), undrained
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 (8 oz) can refrigerated biscuit dough
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease completely.
  3. In a large bowl, combine the cooked beef and onion mixture with the cream of mushroom soup, cream of chicken soup, sour cream, Rotel (with liquid), frozen corn, and frozen green beans. Mix until everything is evenly combined.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. Open the biscuit dough and separate the biscuits. Arrange the biscuits over the top of the beef mixture, leaving small gaps between them. Do not overlap the biscuits.
  6. Bake for 25 minutes, or until the biscuits are mostly cooked through.
  7. Remove the casserole from the oven. Sprinkle the shredded cheddar cheese evenly over the biscuits and the exposed filling.
  8. Return the casserole to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the biscuits are golden brown.
  9. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • For a slightly zesty flavor, add 1 teaspoon of taco seasoning to the beef mixture when combining the ingredients.
  • If you prefer a different topping, you can substitute the biscuit dough with a package of cornbread mix prepared according to package directions.
  • This is a great make ahead casserole; assemble it completely, cover, and refrigerate for up to 24 hours before baking. Add about 10 minutes to the initial baking time if baking directly from the refrigerator.
