Your go-to recipe for loaded nachos, perfect for game day or any party. Easy to assemble and bake on a sheet pan for maximum flavor and minimal cleanup.

  • 1 bag tortilla chips
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (15 oz) can refried beans, warmed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sliced jalapeños
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef in a skillet over medium-high heat. Drain off any excess fat.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  4. Spread the tortilla chips in a single layer on a large baking sheet.
  5. Spoon the seasoned beef mixture evenly over the chips.
  6. Spread the refried beans over the beef.
  7. Sprinkle both cheeses evenly over the beans.
  8. Scatter the jalapeños and red onion over the cheese.
  9. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro and serve immediately with optional toppings.

Notes

  • For crispier chips, layer your toppings carefully. Start with a base of chips, then a thin layer of beans, followed by the meat, and finally the cheese and jalapeños.
  • You can substitute ground turkey or chicken for the ground beef.
  • Add a can of drained black beans along with the refried beans for extra texture.
