Make these simple, no-bake peanut butter Rice Krispie treats. They are soft, gooey, and packed with peanut butter flavor. This quick cereal bar recipe is easy to make with kids.

  • 6 cups puffed rice cereal
  • 1 cup creamy peanut butter
  • 1 (10 ounce) package marshmallows
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  2. Measure the puffed rice cereal into a large bowl and set it aside.
  3. In a large saucepan, melt the butter over low heat.
  4. Add the marshmallows to the melted butter. Stir constantly until the marshmallows are completely melted and smooth. Remove the pan from the heat.
  5. Stir in the peanut butter and vanilla extract until fully combined with the marshmallow mixture.
  6. Pour the marshmallow mixture over the cereal in the large bowl. Use a spatula coated lightly with cooking spray to fold the cereal into the mixture until it is evenly coated.
  7. Transfer the mixture to the prepared baking pan. Press the mixture down evenly into the pan using the back of a greased spatula or wax paper. Do not press too firmly, as this makes the treats hard.
  8. Let the treats cool completely at room temperature for about 30 minutes before cutting them into squares.

Notes

  • For extra gooey treats, slightly under-melt the marshmallows.
  • If you want a chocolate topping, melt 1 cup of chocolate chips with 1 tablespoon of peanut butter and spread it over the cooled bars.
  • To prevent sticking when pressing the mixture, lightly grease your hands or use a piece of wax paper.
