Make this sweet and savory pineapple casserole, a traditional Southern side dish featuring crushed pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping.

  • 20 oz can crushed pineapple, drained well
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup sharp cheddar cheese, shredded
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1 sleeve (about 30) Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the drained crushed pineapple, sugar, flour, and beaten eggs. Mix until just combined.
  3. Gently fold in the shredded sharp cheddar cheese. Pour this mixture into the prepared baking dish.
  4. In a separate small bowl, toss the crushed Ritz crackers with the melted butter until the crumbs are evenly coated.
  5. Sprinkle the buttery cracker mixture evenly over the top of the pineapple mixture in the baking dish.
  6. Bake for 30 to 35 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
  7. Let the casserole cool for about 10 minutes before serving warm.
