  • 1 medium yellow onion
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • Applesauce, for serving
  • Sour cream, for serving

Instructions

  1. Grate the peeled potatoes and onion using the large holes of a box grater.
  2. Transfer the grated potato and onion mixture to a clean kitchen towel or cheesecloth. Gather the edges and twist tightly to squeeze out as much liquid as possible. This step is crucial for crispy latkes.
  3. In a medium bowl, combine the squeezed potato-onion mixture, beaten eggs, flour, salt, and pepper. Mix until just combined. Do not overmix.
  4. Pour vegetable oil into a large skillet to a depth of about 1/4 inch. Heat the oil over medium-high heat until it shimmers. You can test if the oil is hot enough by dropping a tiny bit of batter into it; it should sizzle immediately.
  5. Carefully drop spoonfuls of the latke batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the skillet; fry in batches.
  6. Fry the latkes for about 3-5 minutes per side, until golden brown and crispy.
  7. Use a slotted spoon or spatula to remove the latkes from the skillet and transfer them to a plate lined with paper towels to drain excess oil.
  8. Repeat with the remaining batter, adding more oil to the skillet if needed.
  9. Serve the hot latkes immediately with applesauce and sour cream.

  • For extra crispy latkes, ensure you squeeze out all the excess moisture from the potatoes and onions.
  • You can prepare the batter a short time in advance, but fry immediately after mixing for the best texture.
