12 English muffins, split
1 cup pizza sauce (marinara or preferred flavor)
2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese (optional)
1/2 cup sliced pepperoni or preferred toppings
1 teaspoon dried Italian seasoning (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 Celsius). If using a toaster oven, set it to the toast or bake setting.
Place the split English muffins, cut-side up, on a baking sheet.
Lightly toast the muffins for 2 to 3 minutes until they are slightly firm. This prevents sogginess.
Spread about 1 tablespoon of pizza sauce evenly over the surface of each muffin half.
Sprinkle the mozzarella and cheddar cheese over the sauce.
Add your desired toppings, such as pepperoni, mushrooms, or peppers, onto the cheese.
Sprinkle with Italian seasoning, if using.
Bake for 8 to 10 minutes, or until the cheese is completely melted and bubbly and the edges of the muffin are golden brown.
Remove from the oven and serve immediately.
Notes
For an Air Fryer method: Place 2-4 muffin halves in the air fryer basket. Cook at 375 degrees Fahrenheit for 4 to 6 minutes, checking frequently to prevent burning.
To make a Breakfast Pizza variation, substitute the pizza sauce with scrambled eggs and top with cooked sausage or bacon and cheese.
These mini pizzas freeze well. Assemble completely (do not bake), place on a tray, and freeze until solid. Transfer frozen pizzas to a freezer bag. Bake from frozen at 400 degrees Fahrenheit for 12-15 minutes.
