A vibrant and flavorful Mexican-inspired layered dip perfect for parties and gatherings. Each scoop offers a delicious combination of beans, guacamole, salsa, cheese, and more.

Ingredients

  • 1 can (16 ounces) refried beans
  • 1 container (16 ounces) sour cream
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup chopped tomatoes
  • 1 cup chopped green onions
  • 1 can (4 ounces) chopped black olives, drained
  • 1 avocado, mashed
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, mix refried beans with 1/4 cup of the sour cream. Spread this mixture evenly in the bottom of a 9×13 inch baking dish.
  2. In another bowl, combine the remaining sour cream with the taco seasoning. Spread this mixture over the refried bean layer.
  3. Sprinkle the shredded cheddar cheese evenly over the sour cream layer.
  4. Top the cheese with chopped tomatoes.
  5. Scatter the chopped green onions over the tomatoes.
  6. Arrange the drained black olives over the green onions.
  7. In a small bowl, mash the avocado with lime juice and salt. Spread this guacamole layer on top of the olives.
  8. Serve immediately or cover and refrigerate until ready to serve.

Notes

  • For a spicier dip, add a layer of your favorite salsa or some diced jalapeños.
  • You can prepare the layers a few hours in advance, but it’s best to add the guacamole just before serving to prevent browning.
  • Serve with tortilla chips, crackers, or vegetable sticks.
