Make this easy slow cooker chicken stew for a set it and forget it dinner. Tender chicken and vegetables simmer in a rich broth, creating the best comfort food stew recipe for weeknights.

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups Yukon Gold potatoes, cubed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 1/2 cup milk or heavy cream (optional, for creamy stew)

Instructions

  1. Place the cut chicken, onion, carrots, celery, potatoes, chicken broth, thyme, rosemary, bay leaf, salt, and pepper into the basin of your slow cooker.
  2. Stir all ingredients together until combined.
  3. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is very tender.
  4. Remove and discard the bay leaf.
  5. If you want a thicker stew, whisk together the cornstarch and cold water in a small bowl until smooth. Stir this slurry into the slow cooker.
  6. If you prefer a creamy chicken stew crockpot version, stir in the milk or cream now.
  7. Cover and cook on HIGH for an additional 15 to 20 minutes, or until the stew has thickened to your liking.
  8. Stir in the frozen peas during the last 10 minutes of cooking.
  9. Serve your tender chicken stew hot.

Notes

  • For best results with the slow cooker chicken stew recipe, use chicken thighs; they stay moister than breasts during long cooking times.
  • If you skip the optional cream, you can still achieve a slightly thicker broth by letting the stew rest for 10 minutes after thickening with cornstarch.
