  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup water or chicken broth
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha or chili garlic sauce (adjust to taste)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • Optional toppings: chopped peanuts, lime wedges

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5 to 7 minutes. Drain off any excess fat.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. In a small bowl, whisk together the water or broth, soy sauce, brown sugar, rice vinegar, and Sriracha or chili garlic sauce to create the sauce.
  5. Pour the sauce mixture over the chicken. Stir well and cook for 2 to 3 minutes, allowing the sauce to reduce and coat the chicken mixture.
  6. Remove the skillet from the heat. Stir in the fresh cilantro and green onions.
  7. Arrange the lettuce leaves on a serving platter. Spoon the chicken mixture into the center of each lettuce cup.
  8. Serve immediately with optional toppings like chopped peanuts and a squeeze of fresh lime juice.

  • For a crunchier texture, add 1/4 cup of finely diced water chestnuts when you add the sauce.
