Create an elegant, coffee-infused Italian dessert with layers of ladyfingers and mascarpone cream. This recipe demystifies tiramisu, offering a delicious no-bake option perfect for entertaining.

Ingredients

Scale
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1/2 cup Marsala wine
  • 16 ounces mascarpone cheese, softened
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups strong brewed coffee or espresso, cooled
  • 1/4 cup coffee liqueur (optional)
  • 2430 ladyfingers
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a heatproof bowl set over a saucepan of simmering water, whisk together egg yolks and granulated sugar. Cook, whisking constantly, until the mixture is pale yellow and thickened, about 5-7 minutes.
  2. Gradually whisk in the Marsala wine and continue to cook, whisking, until the mixture reaches 160°F (71°C) on an instant-read thermometer. Remove from heat and let cool completely.
  3. In a separate bowl, beat the mascarpone cheese and vanilla extract until smooth.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture until just combined.
  6. Fold the cooled egg yolk mixture into the mascarpone and cream mixture until smooth and fully incorporated.
  7. In a shallow dish, combine the cooled coffee and coffee liqueur, if using.
  8. Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy. Arrange a single layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
  9. Spread half of the mascarpone cream mixture evenly over the ladyfingers.
  10. Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream mixture.
  11. Cover the dish with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  12. Before serving, dust the top generously with unsweetened cocoa powder.

Notes

  • For a richer flavor, use freshly brewed espresso.
  • Ensure your mascarpone cheese is at room temperature for easier mixing.
  • Chilling time is crucial for the best texture and flavor.
  • This dessert can be made one day in advance.
