1 pound pizza dough (store-bought or homemade)
1 tablespoon olive oil
3 cloves garlic, minced
1/4 cup unsalted butter
1/4 cup all-purpose flour
1 cup whole milk, warmed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 cup whole milk ricotta cheese
1 cup shredded low-moisture mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 475 degrees Fahrenheit. Place a pizza stone or baking sheet in the oven while it preheats.
Prepare the white sauce: In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
Remove the sauce from the heat. Stir in the salt, pepper, and nutmeg. Let the sauce cool slightly.
In a separate bowl, combine the ricotta cheese and Parmesan cheese.
Stretch or roll out your pizza dough to your desired thickness on a lightly floured surface. Carefully transfer the dough to a piece of parchment paper or a pizza peel dusted with cornmeal.
Sprinkle the shredded mozzarella cheese evenly over the top.
Carefully slide the pizza (with the parchment paper, if using) onto the preheated pizza stone or baking sheet.
Bake for 10 to 14 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.

Notes
For a New York Style White Pizza flavor, use Pecorino Romano cheese instead of some of the Parmesan.
If you prefer a stronger garlic flavor, infuse the olive oil with garlic slices before mincing and adding them to the butter. Remove the slices before adding the flour.
This recipe works well with store-bought pizza dough for a quick dinner.
