Make crispy zucchini fritters with this simple recipe. These patties are a quick way to use garden zucchini as a snack or side dish.

  • 2 cups grated zucchini
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and place it in a fine-mesh sieve. Press gently to remove excess water.
  2. In a medium bowl, combine the grated zucchini, flour, egg, Parmesan cheese, salt, and pepper. Mix until just combined.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
  5. Cook for 3-4 minutes per side, until golden brown and crispy.
  6. Remove the fritters from the skillet and drain on paper towels.
  7. Serve warm.

  • For extra crispiness, you can bake these fritters at 400°F (200°C) for 15-20 minutes, flipping halfway through.
