  • 1 cup milk
  • 1/3 cup unsweetened cocoa powder

Instructions

  1. Grease an 8×8 inch baking pan.
  2. In a heavy-bottomed saucepan, combine sugar, butter, and milk.
  3. Cook over medium heat, stirring constantly, until butter is melted and sugar is dissolved.
  4. Bring the mixture to a boil and cook, stirring occasionally, until it reaches 238°F (114°C) on a candy thermometer (soft-ball stage). This takes about 10-15 minutes.
  5. Remove the saucepan from the heat. Add the cocoa powder and vanilla extract.
  6. Let the mixture cool, undisturbed, until it reaches 110°F (43°C). This is crucial for texture.
  7. Beat the mixture vigorously with a wooden spoon or electric mixer until it thickens and loses its gloss. You will see it start to crystallize.
  8. Quickly spread the fudge into the prepared pan.
  9. Let it cool completely before cutting into squares.

Notes

  • For a shortcut, you can use sweetened condensed milk instead of sugar and milk. Adjust cooking time accordingly.
  • Testing for soft-ball stage without a thermometer: Drop a small amount of the mixture into cold water. If it forms a soft, pliable ball, it’s ready.
  • Beating the fudge as it cools is key to achieving the creamy, slightly grainy texture.
