  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla extract and salt.
  4. Gradually add the flour, mixing until just combined.
  5. Stir in the finely chopped nuts.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be pale.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, roll the cookies generously in additional powdered sugar until they are fully coated.

  • For a smoother texture, you can pulse the nuts in a food processor until finely ground.
  • Ensure the cookies are completely cool before rolling in powdered sugar to prevent them from becoming sticky.
